Good luck on your replication, it's actually a really simple setup.
One thing to keep in mind is that if you reduce the surface area while maintaining the same gap you can increase the voltage across the electrodes.

You can also reduce the gap but you'll quickly run into problems with arcing and the bubbles will be so dense that you won't be able to see how they are moving around.
I tried several different setups, gaps, and electrode sizes before I made the video as it was the best one to see what was going on in the water.
